Italy or Portugal or London + Paris in early November for 1st anniversary?

My husband and i are planning for our first anniversary trip for the first week of November this year for a duration of around 8 days. We live on the east coast. Looking at Italy or Portugal or a mix of London and Paris (want to go to Disney!) but can’t make up our minds!

We love to sightsee and go to new places, and love art and museums. We understand daylight won’t be as much during that time for all three, and weather is a hit or miss. But want to see which is highly recommended as a whole or what would be most worth it for that particular season. Nature is important but we also love city lights and vibes. Please help! 🙏
